Who doesn’t need a little midday energy boost?! Forget energy drinks, we’re focusing on healthy energy-inducing alternatives this year. Cue Shelby’s energy bites! 

Our friend @shelbyhjohnson has created yet another incredible recipe for us! Her energy bites are made from wholesome ingredients you can feel good about fueling your body with. The carb-loaded oats provide energy-producing vitamins and minerals, the flaxseed provides a healthy dose of omega-3 fatty acids, and the peanut butter is a great source of protein (plus the other ingredients make it super yummy.) Adding in the coconut, honey, vanilla and chocolate chips makes these sweet enough for kids to enjoy too.

With the extra energy these give you, you can clean the house, walk the dog, cook dinner AND dessert, and end the night with a jog around the neighborhood. Or maybe just make it through the workday without needing a nap. We’d love it if you used that energy to focus on YOU. Accomplish those 2021 goals and tick off those resolutions one by one, we know this is your year!

Safe at Home Recipe: Shelby's Energy Bites

Ingredients

  • 1 cup old-fashioned oats
  • 2/3 cup toasted shredded coconut
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup honey
  • 1 tsp vanilla extract

Instructions

  1. Stir everything together in a large mixing bowl until combined. Cover the bowl and chill in the fridge for 2 hours.
  2. Roll the mixture into 1-inch balls. Then, enjoy!
