Mmm, the flavors of the holidays- cranberry, orange, walnuts…  Wouldn't it be lovely to have a recipe combine these flavors for the ultimate holiday treat? Well, have we got some news for you! The wonderful @kate_romanoff whipped up these delicious cranberry orange muffins for us and we are thrilled to be sharing them with you. These muffins have everything you could ask for: tart cranberries, tangy-sweet orange glaze, and walnuts for crunch.

Do you know what’s great about muffins? They are traditionally considered breakfast food but let’s be honest, they are totally a dessert as well. Dessert for breakfast is our favorite kind of breakfast Talk about a win-win.

We know these muffins will be a hit among you and your family at Christmas brunch, the only issue you’ll run into is trying to eat just one.

Kate's Cranberry Orange Muffins

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 2 teaspoons baking powder
  • 2 large eggs
  • 2/3 cup orange juice
  • 1/3 cup vegetable oil
  • 1 cup cranberries, coarsely chopped
  • 1 cup chopped walnuts

Orange Glaze

  • 1 cup powdered sugar
  • 2 Tablespoons orange juice

Instructions⠀

  1. Combine flour, brown sugar and baking powder in a large bowl.
  2. Separately mix eggs, orange juice and oil
  3. Combine wet and dry ingredients, then stir in the cranberries and the walnuts.
  4. Bake for 18 to 20 minutes at 375°

Orange Glaze

  1. Mix the powdered sugar with orange juice until smooth. Then, drizzle the glaze over cooled muffins.
