A new year has bloomed and as we all recover from the (many) holiday cookies we’ve consumed in the past few months; we’re looking for some less-sugary food options to serve to the whole house. These mason jar burrito bowls made by @happilyharperblog are a nutritious and simple way to pre-make a homemade lunch for the whole family that they will actually look forward to.

These mason jar burrito bowls are a showstopper. The multi-colored layers really stand out, and you can build the recipe around what each individual person likes to eat. Our recommendation? Prepare all of your staple burrito ingredients: Cook your meat (season just how you like it!), cook the rice and beans and chop all of your vegetable toppings. Then, have the whole family come in, grab a jar and build their own “bowl.” After plenty of (delicious) research, the below recipe is what we chose as our favorite.

The final result is a filling, tasty and nutritious, homemade grab-and-go lunch that you can prepare alongside dinner the night before. As long as they are kept refrigerated, each mason jar burrito bowl should last 3 days. When you’re ready, shake up the jar to combine all the goodies inside, grab a fork and go to town. Happy lunching!

Safe at Home Recipe: Mason Jar Burrito Bowls (makes 1)

Ingredients:

  • 1/4 cup salsa
  • 2 tbsp black beans
  • 2 tbsp corn
  • 1/4 cup cooked brown rice
  • 1/3 cup grilled chicken
  • Toppings to taste:
  • tomatoes
  • lettuce
  • avocado
  • cheese
  • cilantro
  • lime juice

Instructions:

  1. Put the ingredients into your mason jar the night before; store in your fridge.
  2. When you're ready to eat, give the jar a shake, open, and enjoy!

Pro tip:

To avoid any soggy burrito jars, make sure you put the “wet” ingredients in first. Salsa, lime juice, and any other liquid substance you choose to add in goes at the bottom, while your rice and lettuce can stay separated at the top until you’re ready for all of the flavors to mingle.
