Fall has arrived and we’re happy to say it has arrived in our safe at home kitchens, as well. We’re transitioning ourselves gently from late summer to early autumn by making this delicacy, fresh caramel and peach ice cream. The tangy-tart peaches and the nutty, sweet caramel fold easily into a clean vanilla ice cream base, making this dessert both easy to make and an experience to enjoy.

We do want to warn you, making this treat can get a little messy. The dangers of softening ice cream on the counter are easy to predict and avoid (pro-tip: empty the whole carton into a bowl while it’s still frozen, then let it sit out while you prepare the caramel and peaches). However, making your own caramel is sticky business, and peeling peaches means dealing with a lot of juice.

For this reason, we encourage you to take this recipe slowly, focusing on only one ingredient progressing at a time. If you empty your ice cream carton into a large bowl to soften first, you can turn your attention onto the caramel, which calls for constant stirring. True caramel takes a lot of love to make, so leaving it to continue heating while you clean up some peach juice isn’t ideal. Once your caramel is thick and golden brown, you can take it off the heat and turn to your peaches with confidence.

Once you get to your peaches, you’ll need a different kind of patience. We recommend peeling them over a bowl to catch excess juice, throwing pits and skins alike into a scrap pile. As your ice cream and caramel are both slowly approaching room temperature, you’ll want to be cognizant of how long it will take you to chop every peach into small pieces. Be careful with the knife, as peeled peaches are extremely slippery. Once you’ve chopped all 6 successfully, you’ve reached the home stretch. Take a congratulatory deep breath.

Swirling each prepared ingredient into soft vanilla ice cream will be a welcome reprieve to the focused, high stakes preparation stage. Let yourself feel the satisfaction of accomplishment as the trifecta of this dessert mixes together. You may want to sneak a taste before popping it back in the freezer, you’ve earned it.

Caramel Peach Ice Cream Recipe:

Ingredients:

  • 1 carton of vanilla ice cream, softened
  • 6 peaches
  • Syrup
  • 1/2 cup butter
  • 1 cup sugar
  • 1 tsp lemon juice
  • 3/4 cup heavy cream


Instructions:

  1. Melt butter in saucepan, add sugar and lemon juice, heat and stir until it turns a caramel color. Gradually stir in heavy cream, take off heat, and set aside.
  2. Scoop ice cream into a large bowl.
  3. Skin your peaches, remove the pit and chop into small pieces. Add to large bowl. Combine carefully with a large spoon.
  4. Once combined, drizzle in caramel syrup. Re-freeze before enjoying!
